Three Appetizers and a Give-Away!

Hello my dear readers!

I have a surprise for you today! The friendly people at Pascogifts.com wanted me to do a give-away. So I said, ok!* The object I am giving away is featured in my pictures and perfect to present the recipes I am posting today: an appetizer serving set! :) (more info here - the black tile is not featured in my photo's but it is part of the set)

"How can I win?" I hear you ask... well it is very simple. Go to my Facebook page and like + share the post about this give-away. Then send me an inbox message on my Facebook page with your details (address where I have to send you the prize) and the winner will be chosen at random by a totally innocent person (names will be pulled out of a hat, the good old fashioned way!)

In the meantime, I made some recipes to go with the set :)

CREAMY STUFFED MUSHROOMS WITH BERRIES

WHAT DO YOU NEED?

  • mushrooms (stems taken out with a small spoon)
  • olive oil
  • goat's cheese or if you prefer, some cream cheese
  • panko bread crumbs
  • dried goji berries or cranberries

 

WHAT DO YOU NEED TO DO?

  • Pre-heat the oven on 180°C. Put the mushrooms in a bowl and add some olive oil. Mix it all in. If you want, you can also add some herbs or spices or you can just season them with salt and pepper.
  • Fill all the mushrooms with some cheese and stuff in three or four berries before topping it with panko, placing them on a baking sheet. Place in the oven and keep an eye on them. They will be done when the mushrooms are nicely coloured.

TOAST WITH HALLOUMI AND SPICY PUMPKIN

WHAT DO YOU NEED?

  • pumpkin chopped into cubes (1cm by 1cm), two handfuls.
  • harissa (as much as you want to handle)
  • olive oil
  • halloumi chopped in slices (not too thin)
  • some old slices of french bread

 

WHAT DO YOU NEED TO DO?

  • Pre-heat the oven to 180°C. Mix the pumpkin cubes with olive oil and harissa, place in a baking tray and pop in the oven for about 10-15 minutes, making sure it cooks nicely by stirring it once in a while. Place the halloumi on a hot grill pan so it heats through and browns a little. At the same time, pop the slices of bread in the oven. When everything is ready, place the cheese on the bread an top it with some halloumi pumpkin. I decorated with some chives, but coriander would be nice too!

TERRINE WITH GOAT'S CHEESE, GRILLED PEPPER MOUSSE AND SCAMPI

WHAT DO YOU NEED?

  • grilled peppers, conserved
  • ricotta (200g)
  • goat's cheese, the spreadable kind
  • scampi, peeled except for the tail
  • some coriander or parsley to decorate

WHAT DO YOU NEED TO DO?

  • Grab some smooth, spreadable goat's cheese and place a first layer. Then drain the grilled peppers of the oil they're in and into a bowl with the ricotte. Blitz it together and add a spoonful to the verrines. Place it in the fridge. In the meantime, grill the scampis in some garlic and olive oil. When ready, add one to each verrine and add some coriander or parsley.
