Pasta with Cheese Cream, Peas and Basil Oil
I was contacted by Soubry a while ago for a great cause: Les Restos du Coeur. They challenged me to create a pasta dish which would only cost about 1 euro per person. I accepted the challenge and came up with the following: pasta with gran padano cream sauce and peas, topped with some basil oil.
Easy peasy ;)
What do you need?
- 150ml liquid cream
- 1 shallot, minced
- 2 cloves of garlic, minced
- 4 leaves of fresh basil
- 2 tbsp of grated parmesan or gran padano
- 2 tbsp of frozen peas
- olive oil
- lardons (optional)
- 1 yolk per person
What do you need to do?
Heat the lardons if using and once the grease starts to melt off, add the shallot and garlic. If you are not using the lardons, get some olive oil in the pan. Start sweating off the onions and garlic and once they are translucint, add the cream and gran padano. Stir everything together and put on a low heat. Check for saltiness: if using the lardons, not much salt is needed. Otherwise, season well.
Cook the pasta as mentioned on the box. At the last 2 minutes, add the frozen peas. When the cooking time is over, drain everything.
While the pasta is cooking, in a mortar and pestle, stir together a little bit of olive oil and the basil leaves until the oil becomes green. I also added a little lemon juice.
Serve the pasta in a bowl with some of the peas. Add the cream sauce, some of the basil oil and top off with an egg yolk.
