Butternut & Goat's Cheese Tart

I was hungry, I had nothing in my fridge, this is what I made. Try it, it’s guuuud. No extra story haha ^^

What do you need?
a pot of creamy goat’s cheese (like Chavroux)
a sheet of puff pastry
200g of cubed butternut or pumpkin
some cayenne powder
some dry oregano
salt & pepper
What do you need to do?
Pre-heat the oven to 180°C while you are cubing the butternut or pumpkin.
Place the cubes in an oven dish, cover with some olive oil, oregano, cayenne (watch out this can be spicy!) some salt and pepper. make sure everything is nicely coated. Pop into the oven for about 30-40 mins or until the veggies are soft.
Spread the goat’s cheese on the uncooked puff pastry. Just leave a couple of cm’s on the side so you create a “crust”. Place the butternut/pumpkin on the goat’s cheese. Place in the oven on a sheet of baking paper and bake for as long as it takes for the pastry to cook (most of the time it is mentioned on the packaging).
Remove from the oven and serve warm :)
Easy and perfect for the lazy (or tired) cook!
I made this recipe for Bonduelle. They currently sell grilled veggies in the freezer section of the supermarket and you can replace the butternut or pumpkin with pretty much any of these. So give it a go and experiment!
