Pasta with Spinach, Garlic Mushrooms and Bacon
This year I joined forces again with Soubry to create a dish which would cost 1€ per person to create awareness of poverty in Belgium. We worked together with Les Restos du Coeur which gives food together with housing, education and health support for the homeless. A great cause in my opinion.
I also went to one of the RdC establishments and helped prepare my recipe for their clients. It was a very interesting experience. I had a wonderful time with the staff who were super welcoming and friendly.
Stirring an enormous pot of sauce was painful though 😂
Anyway, I created a cheap and easy recipe that you can try at home!
What do you need? (for 4 people)
500g Soubry spirelli
300g frozen spinach with cream
40g Grana Padano (or you can use Parmesan)
2 or 3 cloves of garlic, minced
250g mushrooms, sliced
100g bacon cubes
some olive oil
salt & pepper
If you like: some fresh thyme
What do you need to do?
Warm up the spinach with 1/2 of the garlic. Season with salt and pepper and add the cheese. This will create a creamy sauce. Put to the side but keep warm while preparing the rest.
In a non-stick pan, cook the bacon, the rest of the garlic and mushrooms. Add some fresh thyme if you wish and season.
Cook the pasta according to the package.
Drain the pasta and mix with the spinach and cheese mixture.
Serve in a bowl and top with the garlicy bacon and mushrooms.
Finish off with some extra cheese and fresh thyme.
