Easy Ramen Noodles

Homemade ramen noodles might be easy to buy but there is nothing like making your own. On top of that, it really is not that hard to make as long as you have a sturdy pasta roller. The dough is quite tough but the work is 100% worth it. I love using these in a delicious dan dan noodle dish!

You will need kansui to make this dough. No worries, it is super easy! Simply bake 100g of baking soda (not bicarbonate of soda!) in an oven on aluminium foil on an oven tray. 1 hour at 120°C. Then place into a jar with a lid and this will keep for a month.

What do you need? (for 2 big bowls of noodles)

  • 198g extra strong bread flour

  • 1g kansui * explanation above *

  • 1g salt

  • 1/3 cup or 79ml water

What do you need to do?

In a stand mixer (preferable, but you can also do it by hand) mix all the ingredients together until it becomes shaggy. Collect together the shaggy mass and push down with your palm into a rough ball of dough. You might need to do this for a minute or two. Be warned: the dough is very tough so this will require some elbow grease!

Once formed, leave to rest for 15minutes until a damp dish towel.

When ready, roll out with a rolling pin as thin as you can. Then, pass it through your pasta roller on the largest (widest) setting. Fold over and do it again until your dough becomes a smooth slab. When you’re happy, keep rolling until you get the thickness of your noodles that you prefer. I was using the KitchenAid pasta roller and rolled it until thickness setting 6.

Dust with corn flour so they won’t stick. Preferable, leave to rest for about 24 hours but if you wish you can cook them a couple hours after rolling as well. To prepare, boil for 1.5 - 2 minutes and then cool in cold water before serving with hot broth or other toppings.

Disclaimer: this recipe is from Pippy Eats. It tends to be a pretty good basic recipe for ramen and measurements are perfect for 2 big bowls of noodles.
