Broccoli and Kale Soup

Soup’s on, kids!

This soup sounds like the worst nightmare of your kids but I promise it is tasty, green and very satisfying! No special cooking skills required, just a blender and a little bit of your time :D

What do you need? (for 2 big bowls of soup)

  • 1 head of broccoli and its stem chopped in big pieces

  • 3 - 4 big branches of kale, leaves only

  • 1 onion, roughly chopped

  • 1 clove of garlic, roughly chopped

  • some olive oil

  • salt & pepper

What do you need to do?

In a pot, place the broccoli and kale leaves and top up with boiling water. Bring back to a boil and continue to boil until the stems of the broccoli are tender. This should take about 15 minutes but check the tenderness of the broccoli by piercing it with a fork to see if the fork slides through easily.

While the veggies are boiling, heat some olive oil in a small pan. Add the onion and garlic and cook until slightly golden and fragrant.

Tip the broccoli and kale into a blender and add the lightly fried onions and garlic. Add some of the broccoli cooking water and blend. Check the consistency of the soup regularly and if needed, add some more of the water to make it more liquid. Up to you which consistency you prefer! Season with salt and pepper.

Serve in your favourite bowl and top with some cream, olive oil, seeds or anything else you fancy!
