Simplest Apple and Cinnamon Cake Ever

I have this thing where, every night after dinner, I want to eat something sweet. AndI really gotta cut it out because I’m in confinement and I’m not moving very much.

So I'm stepping away from the sweets and treats from the supermarket and instead I make my own cake almost every week and allow myself 1 slice per day. So I make a simple cake base and add whichever ingredients I like to it. I like lemon cake but more than often I make apple cinnamon cake. Let me share my recipe with you!

What do you need?

  • 200g of butter (room temp)

  • 200g of sugar

  • 4 eggs

  • 1 sachet of vanilla sugar

  • a pinch of salt

  • 200g of self-raising flour

  • 1 big apple cored and cut into cubes (or two small apples)

  • 1 tbsp cinnamon powder

What do you need to do?

I used a stand mixer for this but you can also easily do it by hand. I’m just lazy ;)

Pre-heat your oven to 160°C

In a bowl, beat together the butter and sugar until a creamy mixture is made. Add the eggs one by one until they are fully incorporated as well as the vanilla sugar and salt.

Pop in the cubed apples and cinnamon and mix everything together well.

Gradually spoon in the flour while you keep mixing/stirring until this is also fully incorporated. You should have a thick mass.

Pop some baking paper in your cake tin, pour in the batter and stick it in the oven for about 1 hour at 160°C.

Once ready, leave to cool for a bit before slicing it up. Can be kept for up to 5 days in a tupperware or closed off tin.
