Mexican Pickled Red Onions

As if pickling wasn’t already super easy (I promise, it really is!), these Mexican pickled red onions are the easiest, fastest pickle that you can top pretty much anything with. Especially my carnitas!

I will dive right into it. This recipe is pretty straightforward. Just make sure you have a clean, preferably sterilised, jar you can put your onions in.

What do you need?

  • 1 medium large red onion, halved and sliced thinly into “half moons”

  • juice of 4 limes

  • 1 bay leaf

  • 2 tablespoons apple cider vinegar

What do you need to do?

Place all the ingredients in the clean jar starting with the onion and bay leaf, then the lime juice and top off with the cider vinegar. Make sure all the onions are covered. If not, you can add some extra cider vinegar.

Close the jar well and leave in the fridge. You can already eat this after 30 minutes and it will stay delicious for about a month in the fridge. Trust your nose ;)

What can you do with it?

  • use in a steak sandwich

  • top off salads with it

  • any Mexican dish will be delicious with these (carnitas, fajitas, even cheesy nachos will love these pickled onions!)

  • just eat it like that!

Pickles are very healthy for your gut so don’t hesitate to have a daily helping! for this recipe you can also use a regular yellow onion if you like but the red ones give off this beautiful colour that will brighten up any plate!
